My Sync 2/MyFordTouch display works perfectly. Can I use that screen and just buy a module for Sync 3?

Unfortunately you can't, your old display isn't compatible with Sync 3 and has completely different connectors. One of the reasons why Sync 3 is a lot more responsive is the technology in these displays is better (resistive touch vs capacitive touch).
